I’m actually getting ready to put a big batch (for me) of pasta boards in my next firing. I’m planning to give them their own designated sale in the next few weeks.

I have to confess I've only had pasta 3 times since my ankle injury in June, once since I've been back in the U.S. And though I hate to admit it, I'm pretty sure that unintentionally cutting out pasta (and alcohol) from my diet is how I lost 20 lb even while being immobile. I'm looking for a way to slowly work pasta back into my diet because I DO love it so!
I imagine it’s easier to not eat pasta in the US than here. I should maybe try your diet minus the broken ankle, though I doubt I could stick to it for long 😂

A few…Spaghetti with chanterelles, smoked bacon, roasted garlic and rosemary.
Linguine with clams, roasted garlic, hot pepper and bottarga.
Strozzapreti with Gorgonzola Dolce and toasted walnuts.
Gnocchi with fontina and winter truffles.
Risotto with white truffles and parmesan.
Now I am very hungry! (Time for some midnight spaghetti)
